"Shouldn't YOU challenge yourself, Mom?"

The boys' school is hosting a Fall community building event this month. Being an international school, it has an international component. They have invited families to host a table, providing food and something educational, from another country. Any country. Any culture.

So, with a long line of countries' cuisines behind us, I was toying with all sorts of ideas - pomegranate meatballs from Azerbijan, lion's head meatballs from China, apricot soup from Denmark. Then, my 10-year-old totally called me out. The conversation went something like this...

"Mom, you know how you're always talking to us about challenging ourselves, stretching, and learning something new. You say that we should try something a little bit more difficult for us."


Sure. I do say that. Gawd, I should have seen where the conversation was going, but I didn't.

"Okay, so shouldn't you challenge yourself?"

Oh, no. Here we go. What do you have in mind?

"I think we should do the Philippines!"

Really?!?

"I mean, that would be challenging...for you. Especially since you don't usually relate to that culture. Even though the Nonni are from there."

True enough.

So, I clicked on the link to the google doc and typed, under the culture column, the Philippines. Done deal.

Now I just need to figure out what the heck we're cooking!

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them!
